1. Brief Description

Wagyu is a beef of Japanese origin, recognized worldwide for its intense marbling (intramuscular fat), tender texture and distinctive flavor. Its quality is determined through an official grading system (administered in Japan by the JMGA, Japan Meat Grading Association) that evaluates each carcass between the 6th and 7th rib, within 48 hours after slaughter. The result is a combined rating of yield (A, B, C) and quality (1 to 5), with A5 being the highest1,2. The Meat Quality Grade (1 to 5) is defined as the lowest of four independently scored factors: marbling, colour and brightness, firmness and texture, and fat quality — where 5 is the highest and 1 the lowest.5,6

Within this category there is also a higher tier of exclusivity: certified regional designations, such as Kobe Beef, which require (in addition to grade A4/A5 and BMS 6 or higher) a pure genetic lineage (Tajima gyu), a specific geographic origin (Hyogo Prefecture) and slaughter at designated abattoirs3,4. Outside Japan there is no unified grading standard, which opens the door to inconsistencies, misleading labeling and commercial fraud (a critical problem for importers, distributors and horeca establishments that pay premium prices for a product whose authenticity they cannot always verify at the point of purchase).

2. The Problem

Traditional Wagyu/Kobe grading relies on certified JMGA graders who score each carcass visually against standard reference scales, taking the lowest of the four quality factors as the final grade. Even with standardised benchmarks, this assessment remains visual and grader-dependent. This creates several vulnerabilities across the supply chain:

  • Subjectivity: two graders can score the same carcass differently.
  • Lack of traceability at destination: once the meat leaves Japan (or another certified origin) and reaches an importer, distributor or restaurant in the Netherlands, there is no fast, objective way to re-verify that the cut truly matches the grade, origin or brand (Kobe, Matsusaka, etc.) stated on the label or certificate.
  • Fraud and substitution: given the enormous price gap between A5/Kobe and generic or lower grade Wagyu, there is a strong economic incentive for relabeling (selling lower quality, crossbred, or even non-Wagyu beef as certified premium product7).
  • Absence of a global standard: outside Japan (EU, Australia, US) there is no unified grading system, which makes it hard to compare and verify quality claims across suppliers.
  • Cost and speed: lab methods to verify composition (chemical fat extraction, fatty acid chromatography, etc.) are accurate but destructive, slow and expensive11 (impractical for routine checks on every delivery or at the point of sale).

3. How NIR Can Contribute at Each Step

The value chain runs from origin grading to the final consumer. NIR can be applied at six key stages of the chain, replacing subjective visual inspection or slow lab analysis with fast, non-destructive, objective measurements, provided the models are properly calibrated and validated on independent samples12. In a non-destructive, fast and objective way, NIR can quantify several of the traits that traditionally depended on the trained eye of a human grader:

  • Importers/distributors (e.g. Anglo Dutch Meats): benefit at the goods receiving step. They can verify in minutes, without destroying the product, that what they received matches what they paid for, before redistributing it to their horeca and butcher clients.
  • Premium butchers (e.g. Slagerij De Leeuw, The Meatlovers, Valk Slagerij): benefit at the quality control before sale step. They can back up their grade/origin claims with objective data, differentiating themselves from competitors who cannot offer that guarantee.
  • Restaurants / horeca: benefit at the verification before adding the product to the menu or serving it step. They protect their reputation and justify the premium price they charge for a Wagyu/Kobe dish.
  • End consumer: benefits indirectly at every step above, through greater confidence that what they pay for as “A5” or “Kobe Beef” truly is.
  • Certifiers / supply chain auditors: benefit at the periodic audit step, gaining an objective, repeatable tool to validate supplier claims, faster and cheaper than traditional lab analysis.
